5 yrs ago I tried cutting out gluten from my diet for 30 days to see if I felt a difference. Within 2 wks I was convinced. What started as a quest to get rid of debilitating migraines turned out to be the answer I was looking for. I didn’t realize how bad I felt, until I experienced feeling this good. Going completely gluten-free is not necessary for everyone, but increasing the awareness of what’s going in your body is. When we eat out, we are at the mercy of those preparing our food. If we demand better quality & vote with our dollars, we can change our community for the better. -Sara
In 2008, my doctor was absolutely fed up with my high cholesterol. Even though I was only in my 20's she wanted me to start on medicine to control it because diet & exercise weren't cutting it. She had my liver enzymes tested and my albumin came back low. There was no logical reason for it so I went into research mode. I came across some information that changed my life. I cut out all gluten from my diet and so many things "fixed" themselves. A year later when my cholesterol was checked again, it was down to a reasonable level without going on medication.-Amanda
